Chinese Fried Rice

Chinese Fried Rice

Prep Time: 5 minutes
Yields: 1 serving

Ingredients:

1 tablespoon coconut oil
1 yellow onion, diced
1 garlic clove, minced
1 carrot
6 shiitake mushrooms, sliced thin
1/2 cup green peas
1/2 teaspoon Himalayan sea salt
2 eggs, beaten
1 cup cooked brown rice
1 tablespoon toasted sesame oil
3 tablespoons tamari
1 tablespoon mirin
1/4 cup water

Directions:

1. Saute onion, garlic, mushrooms and green peas for 3-4 minutes in 1/2 tablespoon coconut oil. Add Himalayan sea salt. Remove vegetables from the pan and set aside.
2. Add remaining coconut oil to pan and scramble the eggs. With a fork, break up eggs into small pieces. Add the cooked vegetables and brown rice into the pan and heat through. Season with sesame oil, tamari, mirin and water and cook on low heat for an additional 3 minutes.
